Garlic Parmesan Zucchini

Tender zucchini with a creamy, garlicky, cheesy topping baked on. This Garlic Parmesan Zucchini will be your new favorite side dish. It has only 5 ingredients and a 5 minute prep time making it perfect for weeknights.

  • 2 medium or large zucchini
  • 1/3 cup mayo
  • 1/3 cup parmesan cheese
  • 1 clove of garlic minced
  • pinch of salt


  1. Preheat oven to 400. Slice zucchini into 3/4 inch thick slices. Combine all the other ingredients and spread on top of the zucchini rounds. Bake for 20-25 minutes or until the zucchini has softened and the topping is golden.
  2. If you have very big zucchini just use a little more mayo and cheese.
