Keto Tiramisu Original Italian Recipe

iramisu used to be my specialty dessert growing up. This is the Keto version of that recipe for all of us here who are Carb Intolerant so we can still enjoy the sweeter side of life!

Ingredients

  • For the Ladies Fingers Cookies (Savoiardi)
  • 5 pastured eggs, divided
  • ¾ cup Xylitol or Swerve
  • ½ cup coconut flour
  • ½ cup whey protein
  • the zest of one organic lemon
  • For the Tiramisu
  • 5 pastured eggs, divided
  • ⅓ cup Xylitol or Swerve
  • 300 grams Creme Fraiche OR Coconut Cream for a dairy free option
  • 1 cup of strong brewed organic coffee
  • unsweetend cocoa powder for dusting
  • Optional: ¼ cup marsala wine or dark rum

Instructions

  1. To make the Ladies Fingers:
  2. Whisk eggs whites with a electric whisk, adding a pinch of salt.
  3. First whist until just foamy, then add ¼ cup of the Xylitol and keep whisking until very stiff.
  4. In a bowl whisk the egg yolks with the rest of the Xylitol and the lemon zest, until they become white and foamy and all the Xylitol has dissolved.
  5. Now add the egg whites into the yolks, stirring gently with a spatula, being very careful not to overmix and deflate the mixture.
  6. Now add the coconut flour, which you have previously mixed with the whey protein, by slowly passing it through a fine sieve.
  7. Very gently mix in the flour, until fully incorporated.
  8. The dough should be light and fluffy, but not runny. It should hold its shape when put on a flat surface with a spoon.
  9. Now load a pastry sleeve with a flattish, wide nozzle.
  10. On a cookie sheet covered with wax paper make cookies wit the dough, about 3 inch wide,and ½ inch thick.
  11. Bake at 375 degrees for about 15 minutes or until gold colored.
  12. Make sure to not overbake.
  13. Let cool until completely cold before using.
  14. For the Tiramisu
  15. In a bowl whisk the egg whites with a pinch of salt until very still.
  16. In another bowl whisk the egg yolks with the Xylitol until the mixture turns white, like you did for the cookies.
  17. Now add the Creme Fraiche and keep mixing until well blended.
  18. Delicatly add the egg whites into this mixture.
  19. On the side mix the coffee with the optional liquor.
  20. Now dip the cookies into the coffee.
  21. In Individual serving cups or glasses start layering a cookie, with a couple of teblespoons of cream and a dusting of bitter cocoa powder.
  22. Keep layering to reach desired quantity.
  23. Refrigerate for a couple of hours before serving.
