Coconut Chia Pudding

This coconut chia pudding is healthy and easy to make and is loaded with coconut flavour. You only need a handful of ingredients and a bowl to make this recipe!

Ready to kick off the weekend with another chia pudding recipe?

And not just any chia pudding recipe. Coconut chia pudding. This recipe is simple but it’s one of my favourite ways to enjoy a chia pudding. And the best part? It only uses a handful of ingredients and one bowl to make!

Another thing I love about this recipe is that it’s a great option to take on the go. I’ll be heading on a long-weekend road trip this weekend to Toronto and Michigan, and will be packing a couple of these chia puddings in some mason jars to go! I’m telling you, this is one of the best snacks you can bring on a road trip!

What I like to do is layer the chia pudding on the bottom, followed by fruit, and then a little bit of granola or nuts on top for some crunch. (Just don’t forget to pack a spoon!)

Besides enjoying this chia pudding to-go, it can also be equally enjoyed for breakfast, a snack or dessert. (Or hey, even lunch if you really want!) It’s that versatile.

I generally make chia pudding with almond milk, because it has a much more neutral taste. This is great if you’re looking to flavour your chia pudding with some chocolate, or berries…or anything really. If you’re not into coconut milk, you can also just make this chia pudding recipe with almond milk.

coconut chia pudding

This coconut chia pudding recipe starts with some chia seeds and unsweetened shredded coconut and then gets mixed together with some light coconut milk, maple syrup, and just a touch of vanilla. THAT’S IT. Pretty simple, right? What I love about using coconut milk to make chia pudding is that it’s a little bit richer than using almond milk. (since it has some more fat in it) This creates a chia pudding that is super creamy!

After you finish making the base for thie chia pudding, you can add whatever types of toppings you like. In the case of this recipe, I opted for some strawberries and some coconut chips. The combination of coconut and strawberry is a perfect match!

Some other options for toppings can be any fruit you love, nuts & seeds, granola and cinnamon. My “perfect” combination for chia pudding toppings always includes a fruit and something with a bit of a crunch.

A FEW NOTES ON THIS RECIPE:

You can make this coconut chia pudding recipe with full-fat coconut milk if you’re looking for a richer & creamier chia pudding. Just remember that coconut milk can be pretty high in fat, which is why I prefer light coconut milk for this recipe!

If you live in an area where you can get your hands on some fresh coconuts, some sliced up fresh coconut meat would be amazing on top of this chia pudding!
