Tender zucchini slices baked in a creamy Parmesan sauce until golden and bubbly. A perfect low-carb replacement for au gratin potatoes!
Ingredients
- 3 medium zucchini, sliced ¼" thick
- 1 cup heavy cream
- 1 cup Parmesan cheese, grated
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp butter
Instructions
- Preheat oven to 375°F. Grease a baking dish.
- Layer zucchini slices in dish, overlapping slightly.
- Whisk cream, half the Parmesan, garlic, and seasonings. Pour over zucchini.
- Top with remaining Parmesan and dots of butter.
- Bake 25-30 minutes until golden and bubbly.
