Zucchini Parmesan Gratin

Tender zucchini slices baked in a creamy Parmesan sauce until golden and bubbly. A perfect low-carb replacement for au gratin potatoes!

Ingredients

  • 3 medium zucchini, sliced ¼" thick
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp butter

Instructions

  1. Preheat oven to 375°F. Grease a baking dish.
  2. Layer zucchini slices in dish, overlapping slightly.
  3. Whisk cream, half the Parmesan, garlic, and seasonings. Pour over zucchini.
  4. Top with remaining Parmesan and dots of butter.
  5. Bake 25-30 minutes until golden and bubbly.
