All the flavors of a loaded baked potato in keto form! Creamy cauliflower topped with bacon, cheddar, sour cream, and chives. You won't miss the potatoes!
Ingredients
- 2 lbs cauliflower florets
- 8 slices bacon, cooked and crumbled
- 2 cups cheddar cheese, shredded
- 1 cup sour cream
- 4 oz cream cheese, softened
- 2 tablespoons butter
- ¼ cup fresh chives, chopped
- Salt and pepper to taste
Instructions
- Preheat oven: Set to 400°F (200°C). Grease a 9x13 baking dish.
- Cook cauliflower: Steam cauliflower until very tender, about 10 minutes. Drain well.
- Make base: Mash cauliflower with cream cheese, sour cream, butter, and half the cheddar. Season with salt and pepper.
- Assemble: Spread mixture in baking dish. Top with remaining cheese and half the bacon.
- Bake: Bake 20-25 minutes until golden and bubbly. Top with remaining bacon and chives.
