Loaded Cauliflower Bake

All the flavors of a loaded baked potato in keto form! Creamy cauliflower topped with bacon, cheddar, sour cream, and chives. You won't miss the potatoes!

Ingredients

  • 2 lbs cauliflower florets
  • 8 slices bacon, cooked and crumbled
  • 2 cups cheddar cheese, shredded
  • 1 cup sour cream
  • 4 oz cream cheese, softened
  • 2 tablespoons butter
  • ¼ cup fresh chives, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat oven: Set to 400°F (200°C). Grease a 9x13 baking dish.
  2. Cook cauliflower: Steam cauliflower until very tender, about 10 minutes. Drain well.
  3. Make base: Mash cauliflower with cream cheese, sour cream, butter, and half the cheddar. Season with salt and pepper.
  4. Assemble: Spread mixture in baking dish. Top with remaining cheese and half the bacon.
  5. Bake: Bake 20-25 minutes until golden and bubbly. Top with remaining bacon and chives.
