- 1 lb fresh green beans, trimmed
- 3 tablespoons butter
- 4 cloves garlic, minced
- ½ cup freshly grated Parmesan cheese
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon red pepper flakes (optional)
- Fresh parsley for garnish
Instructions
- Blanch the green beans: Bring a large pot of salted water to a boil. Add green beans and cook for 3-4 minutes until crisp-tender. Drain and immediately plunge into ice water to stop cooking.
- Sauté the garlic: In a large skillet, melt butter over medium heat. Add minced garlic and cook for 30-60 seconds until fragrant but not browned.
- Add the green beans: Drain the green beans well and add to the skillet. Toss to coat in the garlic butter. Season with salt, pepper, and red pepper flakes if using.
- Finish with parmesan: Cook for 2-3 minutes, tossing occasionally. Remove from heat and toss with Parmesan cheese.
