Rich, creamy spinach just like your favorite steakhouse. This keto creamed spinach is loaded with cream cheese and Parmesan for an indulgent side dish.
Ingredients
- 2 lbs fresh spinach
- 4 oz cream cheese
- ½ cup heavy cream
- ½ cup Parmesan, grated
- 3 cloves garlic, minced
- 2 tablespoons butter
- ¼ teaspoon nutmeg
- Salt and pepper to taste
Instructions
- Wilt spinach: In batches, wilt spinach in a large pan. Drain very well, pressing out excess liquid.
- Sauté garlic: In the same pan, melt butter and sauté garlic for 30 seconds.
- Make sauce: Add cream cheese and heavy cream. Stir until smooth.
- Combine: Add spinach back, stir in Parmesan and nutmeg. Season with salt and pepper.
- Serve: Cook 2-3 minutes until heated through. Serve immediately.
