Crispy Bacon Brussels Sprouts

These crispy bacon Brussels sprouts are absolutely addictive. Roasted until caramelized and tossed with crispy bacon bits. Even Brussels sprout haters will ask for seconds!

Ingredients

  • 1.5 lbs Brussels sprouts, halved
  • 6 slices thick-cut bacon, chopped
  • 3 tablespoons avocado oil
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons balsamic vinegar (optional)
  • ¼ cup shaved Parmesan

Instructions

  1. Preheat oven: Set to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Cook bacon: In a large skillet, cook bacon until crispy. Remove and set aside, reserving 2 tablespoons of bacon fat.
  3. Season sprouts: Toss halved Brussels sprouts with avocado oil, reserved bacon fat, garlic, salt, and pepper.
  4. Roast: Spread on baking sheet cut-side down. Roast 20-25 minutes until deeply caramelized and crispy.
  5. Combine: Toss roasted sprouts with crispy bacon. Drizzle with balsamic if using.
  6. Serve: Top with shaved Parmesan and serve immediately.
