These crispy bacon Brussels sprouts are absolutely addictive. Roasted until caramelized and tossed with crispy bacon bits. Even Brussels sprout haters will ask for seconds!
Ingredients
- 1.5 lbs Brussels sprouts, halved
- 6 slices thick-cut bacon, chopped
- 3 tablespoons avocado oil
- 3 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons balsamic vinegar (optional)
- ¼ cup shaved Parmesan
Instructions
- Preheat oven: Set to 400°F (200°C). Line a baking sheet with parchment paper.
- Cook bacon: In a large skillet, cook bacon until crispy. Remove and set aside, reserving 2 tablespoons of bacon fat.
- Season sprouts: Toss halved Brussels sprouts with avocado oil, reserved bacon fat, garlic, salt, and pepper.
- Roast: Spread on baking sheet cut-side down. Roast 20-25 minutes until deeply caramelized and crispy.
- Combine: Toss roasted sprouts with crispy bacon. Drizzle with balsamic if using.
- Serve: Top with shaved Parmesan and serve immediately.
